Lately, I’ve been taking my summer goals very seriously. I have pinned and learned to make delicious Italian dishes (side note: Although I am not sure if I will ever make zuppa di cozze again. It was worth the experience.) My newest find: this simple dessert adapted from Kitchy Kitchen, which I will be whipping up again today.

COCONUT WATER SHAVED ICE WITH STRAWBERRY BASIL SYRUP from Claire Thomas on Vimeo.
What you’ll need:
One pint strawberries, chopped
Four basil leaves, torn
Half a cup of Sugar
One pint coconut water
3/4 cup of water
Ice cube tray
Recipe:
First, using an ice cube tray pour the coconut water and freeze.
In a small pan, combine the sugar, basil, and 3/4 cup water. Bring to a boil, then turn off the heat, stir. Let simmer for 10 to 15 minutes until tender. Strain the liquid and discard solids. Chill this syrup in the fridge for 2 hours. Next, put the coconut ice cubes into a blender and blend until crushed. Last, scoop the ice into a cup and pour the syrup. Delicious!
